10 hours roasted lamb with thyme, honey and lemon



A foodie pal of mine, who is in Barcelona now; had a "10 hours roasted lamb with thyme, honey and lemon", at the Brown 33 restaurant on Passeig de Gràcia in Barcelona and wanted to share this with me. it took him time to explain the cooking process and how tender it was! but it is all simply explained in the dish's title!
basically, It is lamb chunks wrapped with with lamb flank and roasted from the morning to be served at night with a side of potatoes that are boiled with the lamb stock then sautéed. 
I can only imagine how tasty and tender that was!
